tell of the three long years of restoration which have resulted in one of the most elegant manor-house hostelries in Spain. Push aside the heavy doors to discover a world of books, rugs, engravings, parquet floors, marble staircases and warm colours. Anyone with an interest in antiques would love it here and no one could fail to enjoy the choice of sitting rooms, the enormous breakfast room in the palace's vibrant kitchen and the sumptuous guest bedrooms: bathrobes in marble bathrooms, top-of-the-range mattresses and bed linen, suites with room for a cocktail party.

You are at the heart of Galicia's green interior, close to the sleepy village of Trives. Your home for the night is a 17th-century manor house with long views of the surrounding hillsides.
Bedrooms were given only the best: chestnut floors and beds, marble-topped tables, stateof-the-art heating and air conditioning, Portuguese marble in the bathrooms, antique mirrors on rustic stone walls. Views are long and green. The treats continue at table: in the vast granite-hearthed dining room, home-made honey for breakfast and, for dinner, the best of Galician country cooking with many of the vegetables fresh from the kitchen gardens. This is real hospitality: share a Queimada with your hosts, the local hot brew that keeps the evil spirits at bay.

Where would anybody, pilgrim or tourist, want to stay when visiting Santiago? As close as possible to the great Cathedral. of course. Look no further than this delightful small hotel 50 yards from the great edifice. It is the creation of two exceptionally friendly Galicians, Esther and Mateos, inspired by a night they once spent in an old Parisian hotel; they were so taken by the experience that they decided to open a similarly intimate hotel in Santiago. All rooms are stylishly furnished with parquet floors, wrought-iron beds and rugs. It is fantastic value but what makes this place doubly special is the care and generosity of your hosts. At breakfast you are treated to fresh orange juice, fruit salads, cold meats, cakes and different breads. Brilliant value in a brilliant position, but note, it can be noisy at night.

directions: From Santiago de Compostela, by Alameda, road for 'Hospital General'. Continue to Carballo, then towards Malpica to Cances; house signed by petrol station. Here are long stretches of fine, sandy beaches, hidden coves and a number of old fishing villages where the seafood is among the best in Spain. You approach through the pretty, old stable yard, with annexe to one side, lawns and flowers. The old granite house has four bedrooms, not huge, but handsome, with shining parquet-clad floors, fitted wardrobes, carefully restored antique beds and good (though somewhat small) bathrooms. No. 3 is the best, we felt, with its antique trunk and two large wardrobes. There is a large, light-filled lounge with a dresser and a wood-burner in the huge lareira. Rosa makes fresh fruit juices and there is local cheese and honey and cake. This is a warm, quiet and unassuming place to stay on the wild, indented coastline of the Rias Altas, little known beyond Galicia.

directions: From Orense, N-120 for Monforte. At km50, exit for Canaval. Sleep in the Bedroom of the Drunkards - so named because of the Goyaesque fresco whose lurching figures will make you feel tipsy even if you don't already. This monument to medieval
life is full of local colour, from the suits of armour standing to attention to the huge stonewalled rooms, the setting for many a feast in former times. The tower is medieval, the rest is 18th century - additions which Galician
noblemen felt befitted their station.The vibrant personalities of hosts Pauloba and Manuel add to the sense of fun, and Manuel's knowledge of history and general erudition is worthy of investigation. Guests are invited to sample the home-made digestif aguadiente in the sitting room, magnificent with its neo-classical painting and a piano crowded with photos. Not the easiest place to find, but well worth a few possible false starts.

In a delectably quiet corner of Galicia, on one of the old routes to Santiago, Pazo de Villabad is worth a long diversion. This fine old manor house sits beside the village church, and behind its sober fat;ade and fine granite entrance is a charming family home. There are heirlooms at every turn, with stacks of lovely pieces in the big, airy bedrooms - old brass or walnut beds, dressers and tables. The most seductive area is the breakfast room with its gallery and enormous lareira (inglenook fireplace) where you feast on cheeses, homemade cakes and jams, and good coffee. The heart and soul of it all is Senora Teresa Arana, a hugely entertaining and sprightly lady, so determined to get it right that she studied rural tourism in France before opening her house. Meet her and share a wonderful home and gardens.

directions: From Pontevedra, A-9 for Vigo. Exit 146 for Cangas. After toll, left following signs for Vilaboa & Cobres. 2km from junction, at kmS marker, take track on left. Pazo 100m from road. Mussel platforms, fishing boats and the majestic sweep of the Rijo de Vigo come into view as you park outside the gate (there is also a small logging factory in the panorama, but it is wooden and discreet). There are two sitting rooms linked by a stone arch with a lovely aged Persian carpet and cast-iron lamps. Bedrooms are sensitively designed (one with the disabled or elderly in mind) and show an architect's love of clean lines and uncluttered spaces. A huge double has a massive fireplace adapted to become a writing desk, and river views. Gravitate to the bar, where the strong local Galician beer is served, and where Juan Carlos may pick up the guitar or the Gallic pipes and serenade you.

directions: From N-642 to Viveiro, take C-640, Lugo road. After 2km, Galdo signed to right. Pazo on right after village. Climbing plants scramble over old stone, the garden creeps right up to the house, the vines hang heavy under the trellis... even the shutters are green. This lovely garden is an integral part of the place, with its big shade-giving trees and beautiful ceramic sculptures dotted about. Food is taken seriously and the dinners are a delight, with traditional food made from mouth-watering ingredients. The service is as friendly as can be. Beautiful bedrooms have big oak beds, beamed ceilings and art on the walls; children are thoughtfully catered for with the provision of small beds and cots. There is a lovely whitewashed beamy sitting room with an open fire and a gallery on the first floor where you can look out over the garden. A sauna, a gym and a billiard room are further reasons to stay in this friendly, arty and delightfully unstuffy hotel.

directions: From Orense, N-52S to Gustei. Then right on CP-6. After som, 1st right. Pazo soom further. Within six kilometres of Orense is a big estate. Within that big estate is a medieval settlement. Within that settlement is an 18th-century house. Within that house are... well, probably no woodcutter's children or lost princesses. Rather, an interior patio and cream-walled rooms with beamed ceilings and period furniture. The impression is of comfortable and stylish country living. Outside there's the garden and an orchard, a large, serene swimming pool and a tennis court. And lots of places to visit close by, including the Cistercian monastery of Santa Maria la Real de Osera. Orense, too, is worth a visit. It's a busy commercial town, once famous for its waters, with a delightful old quarter and a 13th-century cathedral. It also has a lovely seven-arched bridge - one of the finest in Spain - built in 1230 on Roman foundations.

After 4km in Conturiz, right by Hotel Torre de Nunez for Paramo for 11km, then right at sign for 1km to hotel. The River Miño laps at the walls of this ancient mill- girdled round by no fewer than 20 hectares of magnificent ancient woodland (alder, oak, birch), beautiful and precious enough to have been declared a Nature Reserve. Casa Grande de Fervenza is both museum and hotel, and pays homage to the rich cultural traditions of Galicia. The culinary philosophy here is to give you the sort of food that was around when the building was built: hearty Galician hot-pots and rich rabbit stews. Wines are the region's best. Restoration has been meticulous in its respect for local tradition and lore - yet there's no stinting on creature comforts. Antiques have been beautifully restored, rugs woven on local looms, there are linen curtains, chestnut beams and floors and hand-painted sinks.
