The mountainous sierra produces a wide range of quality meats and
park products which are used to prepare traditional dishes such as
cochifrito and oxtail, whilst bars and restaurants are supplied with
fresh fish from the nearest coast. The vegetables grown in the fertile
Guadalquivir valley are the staple ingredient of local specialities
like salmorejo - a cream of gazpacho - like soup garnished with a
hard bailed egg and cured ham - and a stew with broad beans and aubergines.
Examples of Cordoba's traditional confectionery, of Andalusi legacy,
include the alfajores, and the pastel cordobes, a pastry filled with
cider.
As far as handcrafts are concerned, Cordoba is famous for its silver
jewellery and embossed leather products. |

Pilgrimages of Santo Domingo, and Linares mark the beginning of the
Spring Fiestas. In May, the squares and streets of quarters like that
of San Basilio are decked out with flower crosses and a competition
is held to find the most beautiful flower covered patio in the town.
Also around this time is the Feria in honour of Nuestra Señora
de la Salud, a highly popular festive event which coincides with the
main bullfighting season at the Plaza de los Califas.
Cordoba's calendar of festivities and popular events include Corpus
Christi, a festivity during which the magnificent gothic Monstrance
of Arfe is taken out for a procession; La Vela of La Fuensanta, in
September, the fiestas in honour of San Rafael, in October; a Guitar
Festival; a National Flamenca Competition, and a Pop Rock Festival. |
